Italian Stuffed Pork Chops
Ingredients - 6 8 oz bone-in pork chops at least 1 inch thick, 1 tsp
hot
sauce, 1 tbsp melted butter, 1/4 tsp garlic powder, 1/2 tsp onion
powder, Creole Seasoning, 3/4 lb Italian sausage, 1 cup Italian-seasoned
bread crumbs, wooden toothpicks
Directions -
Prepare grill for medium direct heat, remove sausage from casing and
place in a skillet, cook until brown, add bread crumbs and seasonings
and mix well, remove skillet from heat, slice into the pork chops from
the side 1 to 2 inches long. slice all the way to the bone, stuff each
pork chop with mixture in the skillet and seal the pocket with a
toothpick, grill pork chops for 12 to 14 minutes or until internal
temperature reaches 160ºF, flip once during
grilling.
Seafood Stuffed Pork Loin
Ingredients - 1/4 cup butter, 1 cup chopped sweet onion, 1/2 cup chopped
sweet pepper, 1/2 cup chopped celery, 1 cup sliced mushrooms, 3/4 cup
crumbled bacon, 1 lb chopped cooked shrimp, 2 cup bread crumbs,
Creole
seasoning, 1 tbsp hot sauce, 3/4 cup chicken broth, 2 3 to 4 lb boneless
pork loin roasts, 1/4 tbsp melted butter, 1 tsp garlic powder, 1 tbsp
hot sauce, wooden toothpicks
Directions -
Melt butter in a skillet, add onion and
sauté until onions are clear, add sweet pepper, mushrooms, bacon and
stir for roughly 5 minutes, add shrimp, bread crumbs, hot sauce,
sprinkle with Creole seasoning, remove from the heat, slice the pork
loins length-wise but don't cut all the way through, spread contents in
the skillet in the pork loins and seal with wooden toothpicks, prepare
grill for medium indirect heat, place one pork loin on the grill over
direct heat in order to burn grill marks, remove grill marked pork loin
and place in the indirect heat section of the pit, repeat the process
for the second pork loin, grill until internal temperature reaches
150ºF.
Honey Bacon BBQ Ribs
Ingredients - 1/4 cup of honey, 2 tbsp Dry Rub, 1/2 cup ketchup, 1/4 cup
bacon drippings, 2 tbsp Worcestershire sauce, 1/4 cup water, 1 tsp
garlic powder, 1 3 lb rack of spare ribs
Directions -
combine ingredients (except for the ribs)
in a blender and blend until smooth, inject ribs in the meat with the
mixture, prepare grill for medium indirect heat, place ribs on the grill
over direct heat in order to burn grill marks, remove grill marked ribs
and place in the indirect heat section of the pit, grill until internal
tender, you may want to try wrapping the ribs in aluminum foil after
burning grill marks on them in order to assure tenderness.
Glazed Pecans Stuffed Pork
Ingredients - 1 cup chopped glazed
pecans, 2 links of chopped smoked sausage, 1 chopped sweet onion, 1
chopped green peppers, 3 chopped celery stalks, 1 cup melted butter, 3
tbsp Creole mustard,
Directions -
combine ingredients (except for the ribs)
in a blender and blend until smooth, inject ribs in the meat with the
mixture, prepare grill for medium indirect heat, place ribs on the grill
over direct heat in order to burn grill marks, remove grill marked ribs
and place in the indirect heat section of the pit, grill until internal
tender, you may want to try wrapping the ribs in aluminum foil after
burning grill marks on them in order to assure tenderness.
