BBQ Brisket
Ingredients - 1 6 lb beef brisket, 3 tbsp liquid smoke flavoring, 3 tbsp
garlic salt, 3 tbsp onion salt, 3 tbsp celery salt, 1/3 cup
Worcestershire sauce, 3 tbsp ground white pepper, 1 16 oz bottle of
bbq
sauce
Directions - Trim excess fat from the brisket, mix all ingredients
(except bbq sauce) in a bowl, rub mixture over trimmed brisket, cover
and refrigerate overnight, prepare grill for medium indirect heat, sear
brisket over direct hear for 8 to 10 minutes per side, remove brisket
from grill and place in a pan, baste with bbq sauce and cover with foil,
place pan on indirect heat side of grill for 3 1/2 to 4 hours or until
tender, slice brisket thin and serve.
Cajun Brisket
Ingredients - 1 6 lb beef brisket, 4 oz liquid crab boil, 1 16 oz bottle
of bbq sauce
Directions - Trim excess fat from brisket, in large boiling pot fill 3/4
with water and add liquid crab boil, bring to a boil and add the
brisket, boil for 15 minutes and turn off the heat, let the brisket rest
in the water for 1 hour, preheat grill for medium indirect heat, sear
brisket over direct hear for 8 to 10 minutes per side, remove brisket
from grill and place in a pan, baste with bbq sauce and cover with foil,
place pan on indirect heat side of grill for 3 1/2 to 4 hours or until
tender, slice brisket thin and serve.
Cheddar Meat Loaf
Ingredients - 2 lbs ground beef, 2 cups shredded cheddar cheese, 1/2 cup
ketchup, 1/2 cup finely chopped onion, 4 slices of bread, 1 beaten egg,
1 tbsp Worcestershire sauce, 1 tsp
Creole Seasoning
Directions - Prepare grill for medium indirect heat, combine beef, 1 cup
of cheese, egg, Worcestershire sauce, Creole Seasoning in a bowl and mix
well, shape mixture into a brick or loaf, place loaf in a disposable
loaf pan, cover with foil, grill covered for 30 minutes or until the
internal temperature reaches 160ºF,
top loaf with remaining cheese and grill uncovered until the cheese has
melted.
French Hamburger Melt
Ingredients - 1 lb ground beef, 1 tsp mustard, 1 minced clove of garlic,
1/4 tsp dried oregano, 1/4 tsp dried thyme, Salt, Pepper, 4 slices Swiss
cheese, 2 tbsp vegetable oil, 2 sliced onions, 8 slices of French bread
Directions - Prepare grill for medium direct heat, combine ground beef,
mustard, garlic, oregano, thyme, salt and pepper to taste, mix well and
refrigerate for 1 hour, make four patties 1/4 to 1/2 inch thick, in a
skillet over medium heat, cook the onions until tender and season to
taste with salt and pepper, place in aluminum foil and seal, place on
indirect heat portion of grill in order to keep warm, place patties on
direct heat portion of grill, flip after 2 minutes and grill for another
2 minutes, flip again and then cover with onions and cheese, toast bread
on grill while cheese melts on the onions, place patty on 1 toasted side
and cover with the other toasted side.
Grilled French Onion Burgers
Ingredients - 1 lb lean ground beef, Dry French Onion Soup Mix
Directions - Prepare grill for medium direct heat, combine all
ingredients in a bowl, mix well and refrigerate for 1 hour, make four
patties 1/4 to 1/2 inch thick, grill patties for 2 minutes and then flip
for another 2 minutes, grill for another 2 minutes and flip, then grill
for a final 2 minutes, the internal temperature should be 160ºF.
Grilled Prime Rib
Ingredients - 1 6 lb boneless prime rib roast, Creole Garlic
Cajun
Marinade, Creole Seasoning
Directions - Prepare grill for medium indirect heat, place roast in a 2
to 3 inch deep pan, inject the roast with the Cajun Marinade evenly,
sprinkle with Creole seasoning, sear roast over direct heat for 8 to 10
minutes per side, return roast to pan, cover with foil and place on
indirect heat portion of the grill, grill covered for 2 to 2 1/2 hours
or internal temperature reaches your desired temperature for doneness.
Grilled Ribeye
Ingredients -
1 10 oz ribeye steak, salt, black pepper, 1 clove finely chopped garlic,
1 tsp butter, 2 tbsp Italian salad dressing
Directions - Prepare grill for medium direct heat, rub steak with salt
and pepper, garlic and Italian salad dressing, grill steak over direct
heat for 2 minutes, rotate and grill for another 2 minutes, flip and
grill for 2 minutes, rotate and grill for another 2 minutes, baste with
melted butter and grill until internal temperature reaches desired
doneness.
Roasted Garlic Beef
Ingredients -
1 4 lb beef tip roast, 16 oz Roasted Garlic
Cajun Marinade,
Creole
Seasoning
Directions - Prepare grill for medium indirect heat, place roast in 2 to
3 inch deep pan, inject with Cajun Marinade evenly, coat the roast with
Cajun Marinade, sprinkle lightly with Creole Seasoning, place on grill
and grill for 2 hours or until the internal temperature reaches 150ºF.
Southwest Burgers
Ingredients -
2 lbs ground beef, 3 tbsp onion powder, 3 tbsp chopped green chiles,
Creole Seasoning, 8 slices of pepper jack cheese, 4 hamburger buns, 1/4
cup salsa
Directions - Prepare grill for medium direct heat, combine beef, onion
powder, green chiles, Creole Seasoning to taste in a bowl and make 8
patties 1/4 to 1/2 inch thick, place a slice of cheese between two
patties and seal the edge, refrigerate for 1 hour, grill the patties for
2 minutes and rotate for another 2 minutes, flip and grill for 2
minutes, rotate and grill for another 2 minutes, internal temperate
should be around 160ºF, apply a table spoon
of salsa and cheese slice, cook for 2 more minutes, toast buns and serve.
